Living healthy – Minestrone Soup/

Need some help getting the pounds off?  Nothing could be better than minestrone soup – non fattening and luscious.  It works wonders.  Minestrone is probably one of the best because of  its fat busting ingredients – cabbage.  Yes, you heard right.  Cabbage is an excellent food that helps the metabolism.  Check out this healthy recipe from my cookbook.

4 cups water

2 cans diced tomatoes

2 carrots, grated

1 bunch spinach, finely chopped

1 can navy beans, drained

½ green onion

½ bell pepper, chopped

¼ head of cabbage, chopped

¼ bag cooked pasta

2 cloves garlic, chopped

2 tbs. chicken style seasoning

1 tbs. onion powder

1 tbs. garlic powder

1 tbs. Italian seasoning

Cilantro and sea salt to taste

Sauté onion, garlic and pepper in a little water. Then add all of the other ingredients – with the exception of the salt. Add this last. Cook 30 minutes, or until vegetables are tender, add more water if needed.
