Indulge in Skinny Lasagna/

Lasagna is one of the most decadent and most well loved foods on the planet. However because it is so decadent with all of the luscious cheese, Italian sausage and ground beef it can really pack the pounds. I love lasagna and my favorite version comes from The Olive Garden. But how many of you know that if I intend to keep my girly figure that I can’t do that often. So, what do you do when you love lasagna and want to eat it more often but don’t want to pack the pounds? Try a recipe from my cookbook – Skinny Lasagna. It’s made with alternative products that are low in fat, but don’t sacrifice the taste. For those of you who don’t know what Morning Star Crumbles are, they are a vegetarian based product that tastes like ground beef. You’re going to love it.

2-3 c alternative cheese*
1 bag of Morning Star Crumbles
1 package of firm silken tofu crumbled (use this in place of Ricotta)
1 package of lasagna noodles
1 large can of chunky tomato sauce
1 tbs. garlic powder
1 tbs. onion powder
1 tbs. Italian seasoning
¼ cup fructose
Sea salt to taste

Mix all ingredients (except noodles and cheese) into a large pot. Bring to a boil and simmer. When the mixture cools, layer the mixture with the noodles in a casserole dish. Pour ½ cup of water around the sides of the dish. Cover tightly with foil. Bake for 1 to 1 ½ hours at 375 degrees. When you take the casserole out the noodles should be tender. Sprinkle on cheese. Then bake the lasagna uncovered for another 15 minutes or until cheese is melted to your desire.

*Alternative cheeses are healthier. They are soy, rice or vegetable oil based. Most stores now carry alternative cheeses.
