It’s that time of year again where salads are the rage. Get busy making some fantastic summer salads. Here are a few of my favorites salads from my cookbook.  Enjoy!

Chinese Chicken Salad


1 head Boston red tip lettuce chopped

1 head Boston bib lettuce chopped

1 package Gardein chicken strips (precooked)

1 can chow mien noodles

1 green onion chopped

1 c honey

½ c Apple Cider Vinegar

¼ c soy sauce


Marinate chicken slices in soy sauce for 10 minutes. Drain. In a small mixing bowl blend apple cider vinegar and honey together. Toss remainder of ingredients in a salad bowl. Add tofu slices and drizzle on honey vinegar dressing.


Mexican Salad


2-3 Roma tomatoes chopped

1 head Romaine lettuce chopped

1 can navy or pinto beans drained

1 green onion chopped

1 bag corn chips

1 bottle of Catalina dressing

½ c alternative cheese

Garnish with soy bacon bits


Toss all ingredients together in a bowl. Chill and serve.


Mediterranean Salad


2 tomatoes chopped

2 c broccoli chopped

1 package of soy pepperoni

1 large carrot chopped

1 small can black olives

½ bag pasta cooked per directs

½ green pepper chopped

½ red pepper chopped

¼ red onion chopped


Toss all ingredients together in a large bowl. Add and Italian dressing or make the following.
